Pumpkin Spice Pecan Latte. – Half Baked Harvest

Pumpkin Spice Pecan Latte: Think maple pecan whipped cream in a glass. Made with homemade maple candied pecans, pecan maple syrup, spiced pumpkin butter and hot brewed espresso. This is a convenient, homemade version of our favorite pumpkin spice latte. And even better than the original. It’s the perfect fall treat to make all season long.

Now that it’s fall, I’m excited to start sharing pumpkin recipes. I usually wait until October, but I did this last Sunday because it was cold, the leaves were in peak season, and there was a fresh dusting of snow in the mountains.

I couldn’t think of anything I’d like to make more than a hot pumpkin latte. For yearsthe house i go to pumpkin latte made with pumpkin butter, milk and hot espresso. I usually add maple whipped cream, according to a recipe I shared a few years ago.

It’s delicious just the way it is and not an overly sweet latte, so it’s great to drink anytime!

But I was intrigued by this new pecan crunch latte, so I decided to make my own. It’s very easy. The sweet packaging makes my regular pumpkin latte even more delicious and makes it a nice latte to make for a relaxing afternoon.

Pecan soup is absolutely delicious and I can’t help but think about my Thanksgiving menu now. There are new ideas brewing in my head I have a cake that I am very excited to start testing!

Here are the details

Composition

  • pecans
  • maple syrup (use real maple syrup, no sugar added)
  • vanilla extract
  • dark brown sugar
  • cinnamon
  • milk (I prefer whole milk)
  • pumpkin butter (Trader Joe’s or my spiced pumpkin butter)
  • hot espresso or coffee
  • heavy cream

Tools

  • small pot
  • sheet pan

  • small whisk or fork

Step 1: make pecan syrup

In a small saucepan, combine maple syrup and pecans. Cook until the maple syrup evaporates and you can really smell the sweetness in the air. Boiling the pecans in the maple syrup infuses the flavor of the maple syrup.

Remove the syrup from the heat, strain the pecans with a fork, then add the vanilla to the syrup.

Step 2: make pecan crisps

Using maple-soaked pecans, toss them in a baking dish with brown sugar and cinnamon. Cook until browned, then add vanilla.

Cool the pecans, then finely chop them.

Step 3: to make a latte

Then heat it with milk pumpkin oil and a few tablespoons of the pecan syrup from step 1.

Allow the milk to evaporate, then whisk well until frothy.

Pour hot pumpkin milk over a couple of hot espressos.

Step 4: make maple pecan whipped cream

Finally, whip the cream with 2 tablespoons of the pecan syrup from step 1. Spoon the cream over the lattes, then sprinkle each latte with a pecan crunch.

I also love adding a cinnamon stick and star anise!

The most comfortable mug to keep warm this season. I’ll be making this every week until it’s time to move on to holiday lattes!

  • 1. To prepare the syrup + pecans. Preheat oven to 350°F. Line a baking sheet with parchment paper. 2. Combine pecans and maple syrup in a saucepan. Cook on medium heat for 5 minutes. Remove from heat. Drain pecans from syrup and place on prepared baking sheet. Add 1 teaspoon of vanilla to the syrup and set aside. 3. Sprinkle pecans with brown sugar and cinnamon. Bake for 10 minutes until browned. Remove from oven and sprinkle with 1 teaspoon of vanilla. Sprinkle with sea salt. Cool, then chop.4. To make a latte. Combine milk, butternut squash, pumpkin spice (use to taste), and 1-2 tablespoons pecan syrup in a medium saucepan and bring to a boil. Heat the mixture until it evaporates. Using a small whisk, beat until frothy.5. Pour the hot coffee/espresso between 2 glasses and pour over the frothed pumpkin milk. Top with whipped cream and a sprinkle of pecans.
