Welcome to the January AK Cookbook Club! I’m so glad you’re here. A few reminders:
On the first Wednesday of every month, I will announce a new cookbook recipe my cookbook which we will all have to do during the month. No recipes are off limits, so get ready to cook and bake with me every month for a whole year! Think of it as a fun little challenge that you can do with family and friends or on your own (because you’re so ambitious!)

Recipe for January: Golden Curry, Coconut Zucchini Soup
All open page 91 of my cookbook and get ready to make the creamiest, dreamiest butternut squash soup of your life. This soup:
- It’s full of nourishing, aromatic ingredients like fresh garlic, ginger, turmeric, curry powder
- It gets extra creamy from the coconut milk, a little peanut butter, and mixing it all together
- Can easily be made vegan and dairy free
- It’s wonderful with an optional green boost from spinach and lentil protein!
