I’ve never used sweet potatoes, but now I can’t get them enough !! Baked sweet potatoes are the perfect, healthy garnish in the fall and months. Here are some reasons to do them:

How to bake sweet potatoes

  1. Preheat the oven to 425F. Straby potatoes and wash to remove dirt, dry well.
  2. On a baking sheet (lined with foil or parchment paper for easy cleaning, if desired), run holes all over the sweet with a fork.
  3. Bake in the center of the oven until the sweet potatoes are or softened, or until the fork is placed in the largest part, there is no resistance, about 50 minutes.
  4. Allow to cool, then split the tips open with a knife. Season with salt and pepper and add your favorite garnishes.

Ways to enjoy baked sweet potatoes

  • Classic: As a garnish, I just like to eat it with a little butter or olive oil on top (a long way goes a long way!) Or try it with coconut oil to keep it vegan and dairy.
