You can make it at home with high-quality tequila and you’ll enjoy a better Paloma for less money than you might pay at a restaurant.

To make this paloma, we will shake everything except the topo chico. In a cocktail shaker filled with ice. Shaking the ingredients together gives you the kind of paloma you’d get at a fancy cocktail bar. It’s a short step that’s well worth the extra effort.

This Paloma cocktail is made with five simple ingredients, plus an optional sprinkle of salt. Serve over ice in a tall glass. Here’s what you’ll need to make it:

1) White tequila

Tequila Blanco is the key. Tequila Blanco is also known as tequila plata, or white or silver tequila in English. Since it is bottled immediately after distillation, it is generally colorless and offers the purest tequila flavor. Aged tequila (reposado or añejo) has a smoky taste and is dominated by citrus flavors, so I wouldn’t recommend it for a Paloma.

6) A very small pinch of salt

This cocktail is great as written, but here are some fun ways to change up the flavor. Pick one or two, like a mix of hot salt and fresh chili pepper.

  • Make it salty: Coat the rim of the glass with lime juice, then with salt or tajín, a Mexican seasoning mix of chili peppers, lime, and sea salt.

  • ¾ ounce lemonade
  • ½ ounce simple syrup
  • A pinch of salt

  1. Fill a cocktail shaker with ice. Pour in the tequila, grapefruit juice, lime juice, simple syrup, a pinch of salt, and optional bitters. Shake well for 10 to 15 seconds, until the cocktail shaker is ice cold. Set aside.
  2. Fill a tall glass with ice. Strain the shaker mixture over the top. Add Topo Chico. Stir the drink gently if the mixture does not appear evenly distributed.
  3. Garnish with a thin grapefruit wedge and enjoy.

Notes

Suggested tequila: I like Casamigas, Espolón, and Milagro. Tequila Blanco is a popular drink at Paloma. The aged tequila flavors dominate the citrus flavors, so I don’t recommend it.

Measurement Tips: You’ll need about half a grapefruit and a small to medium lemon for each drink. If you don’t have a scale, 2 ounces equals 1/4 cup, 1 ½ ounce equals 3 tablespoons, ¾ ounce equals 1 ½ tablespoons, and ½ ounce equals 1 tablespoon.

Change it: If desired, you can add lime juice and salt to the rim of the glass. For a calmer drink, use 1 ½ ounces of tequila. For a stronger acidic flavor, add 1 to 2 dashes of Angostura orange bitters (not their regular bitters).
